All three of those brands have eBook readers for iPhone, I wonder which is the best, or which format is the most open if I want to read it in different readers

It is always the publisher that releases this stuff to the ebook markets. Never the author.

(I mean, not *always* -- there are always weird cases -- but as a general rule, the publisher manages these things. If you ask an author when his book is coming out for Kindle/iPad/whatever, 95% of the time he'll answer, "Beats me! Ask my publisher. Let me know if you get an answer.")

As for formats, none of those three platforms is open in any useful sense. If you look around, you can find let's-not-discuss-it-here tools for Kindle purchases. I haven't seen the equivalent for Nook or iBooks yet.

The nice thing is that all three stores/apps let you preview the book, so I was able to make an informed decision. iBooks has a really nice look and interface, with virtual pages that flip realistically, but both iBooks and Nook have mildly obnoxious load times on my 2g iPod Touch, so I bought it for the Kindle reader, which has very quick loading. If I had a more powerful device I'd probably have gone with iBooks. Nook reader was pretty unremarkable, although it was nice that you could totally customize your color scheme. All 3 apps do let you customize your font size and choose from at least a few different color schemes, and all 3 offer a decent sepia-toned scheme, although only iBooks displayed the little grayscale subchapter icons properly against a colored background:
